We do not have organic status. However our animals
are kept in the best possible natural conditions, free
range and naturally fed. No GM, no growth promoters -

difficult to handle ... ?
It is a bit like anything else - easy when you know
how. Yes they can be dangerous and they should
always be treated with respect. They will 'bark' when
disturbed or upset, so it is well worth taking note of
this.
A friend of mine described it as 'beef with
crackling'.
Seriously it is a sweet flavour, a little gamey but
not much and very rosy in colour.
